The Course of Study

Module 1: Management Commitment and Responsibilities (11:37)
This module covers management policy, management responsibility, responsibility authority and communication and management review.

Module 2: Quality and Food Safety Management System (12:39)
Topics covered in this module include general requirements, document control and records.

Module 3: FSMA Current Good Manufacturing Practices (33:32)
Topics covered in this module include personnel, plant and grounds, sanitation, water supply and plumbing, equipment and utensils (tools), facility operations and holding and distributing.

Module 4: Personnel and Training (17:40)
Topics covered in this module include competency training and job descriptions.

Module 5: Infrastructure (23:04)
Topics covered in this module include maintenance plans, lighting and work areas, pest management, cleaning and housekeeping and waste disposal.

Module 6A: Product Realization – Part 1 (19:55)
This module will cover the process for bringing new products to fruition. Part 1 of this module will cover the importance of methods and procedures, equipment use and packaging as they relate to product development.

Module 6B: Product Realization – Part 2 (20:36)
Part 2 of this module will cover labeling and its importance in product development and non-conforming products and materials, reword and inventory stock rotation.

Module 7: Purchasing Processes and Controls (9:36)
Topics covered in this module include vendors for incoming goods and services, material and packaging specifications and contract service providers. The topics covered will explain how and why a vendor approval program is necessary for the SF/SF certification.

Module 8: Validation and Verification (35:21)
This module will outline validation and verification methods, their structure, frequency of application and personnel responsible for performing them, audits, product identification and traceability. An animal food defense and biosecurity plan will be included.

Module 9: Animal Food Safety Plan (33:58)
Topics covered in this module are components of and records for a food safety plan, hazard analysis, preventive controls, corrective actions, supply chain programs for FSMA subpart E compliance and how to identify when implementation of preventative controls is not required.
